One route is to be somebody an organisation has already seen work. Volunteer on something small, do it where people can see it, and still be there in month six.

Apply anyway. A years-of-experience line is often a wish, not a hard rule. Read what the organisation has published about its own work, and show that you have.

Yes. Mention something specific from their own work in the first two lines of the cover letter. It shows you chose them, not just any vacancy.

Look at small organisations as well as the well-known ones. Fewer people apply to them, and a small team usually means a wider job.
